Taro tuber, which has the scientific name of Colocasia esculenta, is grown in Vietnam. The nutritional compositions taro tuber are mostly starch, vitamin, protein, lipid, cellulose, and mineral. purpose this study was to determine changes physicomechanical, nutritional, sensory indicators tubers at different harvest times. were determined three harvesting stages 280, 300, 320 days. As a result, right time 300 days or more because have fully developed terms size, weight, composition, by time. Specifically, days, had diameter 5.6 cm weight 71 g, with 69.83% water, 26.17% glucid, 2.82% 0.32% lipid. At 14 amino acids identified, including 7 essential acids, namely, leucine, isoleucine, lysine, methionine, valine, phenylalanine, histidine. Through analysis such as color, smell, taste, texture tubers, choosing for processing storage appropriate.
